Why is so little information about your project? instead of a website, an empty domain, no articles on popular social / media resources. I could not find the code of smart-contract. Do you have it at the github? The projects that have nothing to hide, usually upload the code for transparency. Hope that i wrong and sorry, but In my opinion, it is very similar to scam project. All we know that is no problem to copy the contract code and deploy the token to the Ether network. And then sell at any fantastic price. Please remove doubts, because such thoughts are not only mine.

My #question is: There have so many such DeFi platform exist and offer only ETH as default collateral, which causes problem if ETh price fluctuate. How GemStake solve this problem? (if solution is paying premium as you said, how premium will determine?)
